Spread pesto evenly on the crust. Add pesto to all kinds of soups for a burst of basil flavor. Sprinkle with the parmesan and drizzle with the olive oil. Once crust has baked, add 1/4-1/2 cup pesto to start (add more as needed) to create a thin and even layer, spreading to the edges. Top pizza with fresh arugula and a drizzle of your balsamic reduction. Cook with lid down on grill for 7-8 minutes or until crust is evenly browned. Spread the pesto over the fontina and dollop small spoonfuls of ricotta all over the top.
